A world away from average orange wine, this bottle is a masterpiece from Paolo Bea, the quiet sage of Umbria. The grapes are Trebbiano Spoletino, from vines so old they are trained to grow up trees (arboreus), just as they were in Roman times. They are harvested by hand, macerated on skins for weeks, and then left to rest for years before being bottled, unfiltered and unfined.
The flavor is a slow, savory walk through sun-drenched fields. Dried apricot, toasted almond, and sage mingle with notes of hay and smoke. It has texture and tannin, like an herbal tea that grew up and learned to love wild boar ragu.
