Tuscany's Liquid Devotion
Castello di Volpaia’s Vin Santo ("holy wine") is slow-aged in the rafters of a medieval hilltop village, breathing in the seasons as it transforms. It opens with an amber glow and a nose that whispers stories: dried apricot, orange marmalade, and toasted almond. On the palate, it’s rich and viscous but never heavy, lifted by a bright, pulsing acidity that keeps it fresh.
Made from Trebbiano and Malvasia grapes dried for months on straw mats, then aged for years in ancient sealed barrels (caratelli), this wine is history in motion. Time is the main ingredient.
How to Enjoy
This is Tuscany's answer to reverence, offered in a glass. Pour it at the end of a meal and serve alongside the traditional Cantucci (biscotti) for dipping, or with aged Pecorino cheese.
